Ingredients:
  • 1/4 Pumpkin (250g)
  • 3-4 Cos Lettuce Leaves
  • 1/4 Red Onion
  • 5-6 Cherry Tomatoes
  • Lebanese Cucumber
  • Tin of Tuna (I prefer Safcol due to taste and sustainability)
Beetroot Dip
  • 3 Beetroots, leaves and stalks removed
  • 1/4 Tahini (I use Unhulled)
  • 1 Garlic clove
  • Juice of half a lemon
  • 1/4 Olive oil
  • 2 Teaspooons of Cumin
  • Salt and Pepper
Dressing
  • 50ML Macadamia Oil
  • 1 Tablespoon Apple Cider Vinegar
  • 1 Tablespoon of Bragg Amino Acid (or soy sauce of your choice)
